Gullet is Bovine Cartilage and has anti-inflammatory properties which are believed to relieve the symptoms of rheumatoid arthritis and osteoarthritis. Beef Organ Meat

Also known as offal, this is an even mix of beef heart, liver, lungs, kidneys, gullet and trachea. The Alpha male and female in wolf packs, who insist they eat first, go directly for the organ meat because it is packed with nutrients. Organs are a good source of Protein, essential fatty acids, and many vitamins and minerals including, Thiamin, Vitamin B6, Pantothenic Acid, Folate, Potassium, Vitamin C, Phosphorous, Copper, Manganese, and Zinc, and a very good source of Choline (93.3 mg in just 1 oz of liver), Vitamin D, Riboflavin, Niacin, Vitamin B12, Vitamin A, Iron and Selenium.
Organ meat is rich, so we advise feeding organ meat in small servings (1/8 pound for large dogs, a tsp. or two for the little ones) as a snack or treat, or as an additive to their boneless beef and beef meat and bone dishes a couple of times a week.

Beef Pancreas

Pancreas is low in Sodium. It is also a good source of Protein, Riboflavin, Pantothenic Acid, Phosphorus and Selenium, and a very good source of Vitamin B12.
Our Pancreas is fresh and immediately ground and frozen. Fresh Beef Pancreas is a rich, natural source of digestive enzymes. A small quantity added to any raw meat meal aids in digestion. We add about 1 tsp. to 4 oz. and a heaping tbsp. to a 1 lb. of a (meat-organ-bone) meal a few times a week. Adding Pancreas to the meal is especially helpful during the transition to a raw diet.
Pancreas is also known to be helpful in treating dogs with pancreatic problems. Some dogs do well with raw pancreas alone; others will still need enzymes, but may require less of a dosage. An increased amount of Pancreas can be fed in these circumstances.

Beef Tripe with Spleen

Tripe, in its simplest form, is the stomach lining of ruminant animals. These (ruminant) cud-chewing four hoofed mammals, i.e. cows, sheep and goats, etc., have four chambered stomachs that are very rich in amino acids (muscular development), gastric enzymes (clean teeth), and digestive enzymes (food digestion and utilization). Unlike Tripe for human consumption, this Tripe is raw, unbleached, and un-scolded so all the nutrients are intact.
Tripe has a Calcium to Phosphorus ratio of 1:1, which some feel makes it the ideal food.
Tripe is a good source of Protein and Zinc and a very good source of Selenium and Vitamin B12. It is a very good food to start with when transitioning your companion animal to a raw meat diet because it is abundant in enzymes and beneficial bacteria.
Green Tripe, as it is called, is actually brown in color. The green in “Green Tripe” refers to the tint it may have from the grasses the animal grazes on. It does have a strong, not so pleasant smell, but dogs just love it! Some raw feeders apportion as much as one-third of the diet in Tripe.
